
Bean salad is extremely versatile, healthy and filling. I make it differently each time---depending on what I have in my pantry/refrigerator.
I made this bean salad as a dinner side dish and lunch for me.
Greek Bean Salad
1 can cannelli beans, drained and rinsed
1 can black eyed peas1 cucumber, peeled and seeded
1/2 cup fresh basil chopped
1 tomato, chopped
1/2 cup feta cheese
1/4 cup green onion
2 T olive oil
1 T balsamic
salt and pepper to taste
blend together and serve chilled.
