Lunch with the kids


Most of our days are spent at a park, and that means picnic. Here's a typical lunch for my finicky boys....

The boys get a OPB&P...that would be Organic Peanut Butter (Costco), and blackberry Preserves (Trader Joe's), on whole grain bread. Things I look to avoid in bread and fruit preserves are high fructose corn syrup (common in both), and trans fats which are often in bread. String cheese, and plenty of fresh fruit.

For me, I brought a corn salad that I am also serving as a side dish with dinner.

Recipe for the corn salad:

approx. 4 cups of corn (I used fresh but you can use thawed frozen corn)
1 can drained, rinsed black beans
1 chopped tomato

In the blender or processor --I use the blender because its easier--throw in

1 bunch cilantro
1/2 Cup parsley
1/3 cup olive oil
1/4 cup lime juice
salt and red pepper flakes to taste.
