Pasta Salad

I had several requests for the recipe of the pasta salad that's pictured along side the "BLT".

This is wonderful pasta salad. I love it because I normally make it with orzo pasta which is a small pasta so you taste all the flavors without being bogged down by heavy pasta. In this latest batch I used the Harvest Grain Blend as seen in an earlier post. It was great too.

This recipe makes a lot....maybe 10-12 servings.

Spinach and Orzo Salad

1 (16 ounce) packages uncooked orzo pasta
1 (10 ounce) package frozen baby spinach leaves, defrosted and finely chopped
1, 8 oz. package crumbled feta cheese

(optional) 1, 8 oz. pkg of fresh mozzarella, chopped
3 large tomatoes, seeded and chopped

1/2 cup red OR green onion, finely chopped
1 cucumber, seeded and chopped
1 teaspoon dried basil
1/2 teaspoon ground white pepper
1 cup olive oil
3/4 cups balsamic vinegar

Directions:

Bring a large pot of lightly salted water to a boil. Add orzo and cook as directed; drain and rinse with cold water. Transfer to a large bowl and stir in the rest of the ingredients. Refrigerate and serve cold.

**This is something that can be made the night before. You might need to add more oil and vinegar before serving.
