
I was on the phone talking with my brother-in-law as I was chopping and prepping for a pasta salad yesterday when he began talking about how he had roasted some veggies on the grill. His roasted veggies inspired me to to make this simple yet tasty change to my usual recipe.
Roasted Veggie Pasta Salad
1 red bell pepper, chopped
1/2 large red onion, chopped
2 cups summer squash, chopped
1 T olive oil
Salt and pepper
Wrap in foil and grill for 6 to 10 minutes on each side, direct heat. Let cool.
In a large bowl mix together:
4 to 5 cups cooked pasta. (this time I used a combination of orzo and wheat penne--I was cleaning out my pantry.)
the roasted veggies
3 C raw broccoli, chopped
1 large tomato, diced
1/2 C green onions, chopped
1 C feta cheese
1/2 C fresh basil
3/4 C olive oil*
1/2 C balsamic vinegar*
1/2 T pepper
Salt to taste
*You might need to add more as the pasta absorbs and becomes dry.

I am really enjoying your recipes and menus and they are giving me such inspiration! My family is currently in temp housing because we just relocated and I have a kitchen with nothing in it. I can't cook much right now and I love to cook. So you are helping me stay inspired until I get into our new house and my new kitchen. Keep it up...I am loving your efforts!
