Spicy Shrimp w/ Cucumber Salad


First, I have to comment on this particular grain mix from Trader Joe's. It rocked. Its a mix of Israeli Couscous, Red Quinoa, Orzo, and baby garbanzo beans. Who woulda thought? I mixed in a little lime juice, olive oil and about 1/4 C of chopped cilantro, salt and pepper....yum.




This was really great. I have to get better at portion control. I ate this entire plate.

Cucumber Salad

1 T dill
2 T balsamic vinegar
1 T olive oil
1 t honey
salt and pepper to taste
2 Cucumbers, peeled, seeded and sliced



in a bowl, mix first five ingredients. Add cucumbers and toss.

Spicy Shrimp (inspired by Cooks Country, June/July 2007--my simpler version)

Marinate 1 lb peeled and deveined shrimp in the following for 30 to 60 minutes:



1 jalapeno, seeded and chopped
3 T olive oil
5 T lime juice--approx 3 limes
6 garlic cloves, pressed or minced
1/2 t cumin
1/4 t cayenne pepper
1/2 teaspoon salt



On the stove heat a skillet, add 2 tablespoons of the marinade. Toss in the shrimp (minus the jalapenos unless you like it really spicy) and cook until nice and pink.


Serve with the couscous blend and cucumber salad.


NOTE: The original recipe called for grilling the shrimp. That would have been great but more time consuming so I opted for the stove top.

You have fabulous taste! I just purchased Cooks Country and I was eying that shrimp recipe. I love the idea of doing it on the stove. That is in fact all I have here in this housing is a wacky little stove and a microwave with four of everything (spoons, knives, forks, plates, cups) and minimal of everything else (pots, measuring cups) and no stocked pantry. The moving company packed all of my dry goods etc. we'll see how that turns out, I am envisioning having to throw it all away. Anyway, all I meant to say was I think that this will be a recipes that I could actually make. Thanks!!!!
