
I'm not sure why I chose to make Chili on a 100 degree day, for some reason it seemed like a good idea. Its fast...maybe that's why. Not to mention tasty. It's also, what I call, "a pantry meal". The majority of the ingredients come from your pantry. Oh yeah, its low in fat and loaded with protein, iron and vitamin C.
Okay, so I cheat. I have tried to come up with my own spice concoction but its never as good as the "secret ingredient" passed down from generations...at least one generation, that is. The secret to our favorite chili is the "Carroll Shelby's Chili Kit". It comes with four individual packets: 1. the spices, 2. Salt, 3. Cayenne pepper, and 4. Masa Flour. I ONLY USE THE SPICE PACKET PORTION. Its plenty salty, and I don't add enough liquid to use the masa flour. My husband, who loves spicy, thinks its perfect without extra cayenne.

So here it is....
Chili
Approx 1 1/2 lbs of ground Turkey
1 Pkg of Carroll Shelby's Chili Spices
1 28 oz can petite diced tomatoes in their own juice
1 28 oz can plain tomato sauce
1 14 oz can Black Beans
1 14 oz can Cannellini Beans (white Kidney Beans)
1 14 oz can Red Kidney Beans
Brown turkey with a little olive oil in a large pot. Add rest of the ingredients and simmer on low for 15- 20 minutes. Garnish with grated cheddar.
This recipe makes plenty of leftovers. Chili is one of those things that gets better with time. Looking forward to tomorrow's chili for lunch.

Where can one find the spice package? thanks.
I buy them at Safeway or Bel Air. Im sure you can find it at most stores however. Sometimes I have to ask where it can be found--its not always in the most logical of places. In some stores its next to the regular spices, sometimes its in with other seasonings and mixed spices, and other times its in a separate "gourmet" section. Its worth asking.
