Okay so here's how I do it. I sit with a stack of cooking magazines (Cuisine at Home and Cooks Country--I like these two because they are family friendly and have easy sections). I pull out only this seasons issues, spring/summer months, from the past two or three years and I flip. I come up with mostly easy recipes with one or two being more elaborate. I only meal plan for dinner. Breakfast and lunch are typically the same....that's another post.
This weeks meals:
- Monday- Chicken Cakes with Tomato Con Cocasse (this is way easier then it sounds) and green salad.
- Tuesday-Balsamic Flank Steak (Cuisine at Home) w/ potatoes and corn salad
- Wednesday- Sausage Shish Kabob's and Bean Salad
- Thursday- Spaghetti and homemade meat sauce
- Friday- Fish Tacos w/ cabbage slaw
- Saturday- Turkey Burgers
RECIPES
Chicken Cakes w/ Tomato Concasse (Cuisine at Home, Week Night Menus Book)

I have made some changes to the original recipe--this is my easier version
throw the following in a bowl and mix together:
2 cups cooked chicken (I use a pre made, store bought rotisserie), Chopped in super small pieces
1/2 cup finely diced celery
1 cup diced green onion
1 1/2 cups bread crumbs
1/4 cup parsley
1 T sage
1 T thyme
1 1/2 t kosher salt
4 eggs, beaten
Make into a patty--similar to making a hamburger--fry in olive oil until thoroughly warmed and browned on either side.
Tomato Concasse is a sauce that can go over or under the cakes.
Saute in olive oil: 1 T garlic and 1 t red pepper flakes for about a minute. Add 1, 28 oz can diced tomatoes and salt to taste. simmer for about 10 minutes.
Serve this alone or with a green salad.
The Chicken cakes are favorite of ours and make them often.

So this is the problem with posting your dinner schedule online, you risk me inviting myself over! Dinner Tuesday and Wednesday sound particularly good to me.
The problem when I cook for myself is eating leftovers all week! You'll hardly notice me at the table.
