Chicken With Spicy Peanut Sauce


This was really tasty, quick and easy. The sauce came from a recipe in Cooks Country March/ April 2007. The rest of their recipe was a little too labor intensive, so I changed it....this is my version....
Broiled Chicken w/ Spicy Peanut Sauce

2-3 boneless skinless chicken beasts

6 T water

1/4 C creamy peanut butter

1/4 C Hoisin Sauce

1 clove garlic, pressed or minced

1 t red pepper flakes

1/4 C cilantro, chopped


Slice chicken breasts lengthwise into 3/4 inch strips and place in a 9x13 pan. Mix rest of ingredients in a bowl and pour over chicken coating each piece. Broil on high about 3-5 minutes per side.


NOTE: you can reserve 2 teaspoons of the sauce as a base for a dressing to go over a cucumber salad. Add 1 t red wine or rice wine vinegar and 1/2 teaspoon of sesame oil to the peanut sauce, toss with 2 cucumbers seeded and sliced.
