
Lets face it, most of the time we're in a hurry. We need food fast....hence the invention of the drive thru, pre-made burgers kept warm by florescent heat lamps, and the slogan that sums it all up, "will you be eating this in your car"?
This salad, which is filling and healthy took less than 4 minutes to make. I timed it. I also added Chicken after I snapped the photo--it was already cooked and diced up in a container in my fridge and didn't add any extra time.
"recipe"--per person
1 to 2 handfuls of mixed baby greens ( I always keep my refrigerator stocked with MBG's)
To taste: chopped tomatoes, fresh mozzarella pulled apart or chopped, cooked chicken breast chopped--optional. A little olive oil, balsamic vinegar and black pepper. (lemon pepper is also good).
NOTE: If you want to take this with you to work or the park, mix everything together except the lettuce in a Tupperware container. Keep the lettuce in a separate container (Zip Loc) until ready to eat.
