Taco Salad Dressing

A salad is only as good as its dressing and since most store bought dressings are full of junk (like high fructose corn syrup, hydrogenated oils, excess sugar, and preservatives) I make my own. Salad dressings are really easy and typically don't take make time.

This is my taco salad dressing (I took a picture of it but inadvertently deleted it before I posted, oops)

in a bowl whisk together until smooth:

6 T water
1 very ripe avocado
2 T sour cream
2 t red wine vinegar
2 T finely chopped FRESH cilantro
1 t cumin
juice from 1 lime
salt and red pepper to taste (I like a lot of both)

refrigerate for at least and hour before serving.
