I kind of took this recipe from my sister, Liz. She apparently makes really great meatloaf and I know she puts mushrooms in it....that's really the extent of her influence in this meal. I've never in my life had a bite of or seen a single meal that she herself made....at least I can't recall. She is the queen of take out and weird concoctions like her infamous "macaroni-tuna-mayonnaise" combo she created when we lived together in college. It was so gross!
I give her the benefit of the doubt when she says she make "really great" meatloaf. How hard is it to throw meat into a Pyrex and bake, after all?
This is really good.
Portobella Meatloaf
1 lb ground turkey
1 lb 10-15% fat ground beef
3 to 4 cups of chopped portobella mushrooms
3 cloves garlic, minced
3 T Worcestershire sauce
1 T black pepper
dash or 2 of salt
1 t olive oil
1/4 cup blue cheese--optional
your favorite BBQ sauce--to drizzle over the top
In a skillet saute mushrooms w/ olive oil until soften. Approx 10 minutes. In a large mixing bowl, blend the rest of the ingredients (except the BBQ sauce). Add mushrooms and stir well. Place into a 8x8 Pyrex or baking dish. Drizzle BBQ sauce over the top. Cook for approx 1 hour on 375.
**If you want to try something a little more complicated, pull out your broiling pan. Place your meat mixture on the broiling pan and mold it into a free form mold of a loaf. When it bake the grease (or juice) drips below creating a healthier meatloaf.
