Weekly Menu, September 23rd

ahhh, deep breath...smell the flavors of fall. Somewhere I can smell an apple pie baking, stew cooking and warm frothy coffee drinks brewing. Fall is my favorite time of year. I love the cooling of temperatures and the bounty of warm fall foods. Its also a time of year that I gain about 10 pounds but oh well...pie is worth it.

This weeks menu

Sunday: Grilled Chicken Tacos
Monday: Dijon Crusted Chicken w/ mashed potatoes and garlic green beans (Cooks Country Oct 07)
Tuesday: Crock Pot Beef Bourguignonne with Egg Noodles
Wednesday: Creamy Pasta w/ Sun dried Tomatoes and Broccoli
Thursday: Chicken Pot Pie --with a stuffing crust.







Grilled Chicken Tacos

Dave grilled up some chicken on the BBQ yesterday. I pulled apart the leftover chicken and placed it in a skillet with a little olive oil and fajita spices by Penzys, http://www.penseys.com/.



In a bowl I mixed:


2 avocados
1/2 cup chopped cilantro
juice from 1 lime
1 chopped medium tomato
corn from 1 ear
salt to taste


I heated the tortilla's with some olive oil and melted some cheese. Added the chicken and salsa and voila.

Sorry, I have to say something about heating tortillas with olive oil...there is only one good way to heat tortillas. that's on a cast iron skillet that has had some butter melted onto it. It's not nearly as healthy but a lot more authentic and tasty. My thought for the day.
