Weekly Menu, October 22nd

Even for me, cooking can sometimes feel like a chore. This is one of those weeks. Mostly its because we're having beautiful weather--low to mid 80's. In the summer I would love these temperatures. But its Fall, and I want to cook heavier fall foods...unfortunately its too warm, so here I am....stuck. Plus I have a ton of chicken we need to get through before I start buying more meat...chicken...how boring--Oh poor me.


Weekly Menu:

Monday: Thai green curry chicken--the sauce is pre-made at Trader-Joe's. Its really good. I will put this over some carrots, broccoli and snap peas and maybe some rice.

Tuesday: Pizza, Pizza.

Wednesday: Marinated chicken fajitas ( I picked up some raw flour tortillas over the weekend--you cook them at home...so good. )

Thursday: Chicken in a red wine sauce with root vegetables and wilted greens

Friday: Fish (yet to be determined) and veggies.

On a side note: I know we eat a lot of pizza, its the only way my 3 year old eats any vegetables--I sneak them under the cheese. He eats a ton of fruit, cheese and bread and little else. He doesn't like to eat animals (except ham, bacon, sausage and salami....you know the really good ones.) He will eat pizza though so I make it a lot. Actually he makes it---the kids love to make pizza so we do it together a few times a week--they eat it for lunch too.
