Weekly Menu, October 2nd

We just got back from a long weekend in San Diego. My groceries are a little off and meal planning a bit behind. Catching up with everything has put a fizzle on my eagerness to sit and plan.

So here's what I came up with....

Tuesday: Store bought ravioli's with a homemade red sauce
Wednesday: Potato, Leek and Ham Gratin (cooking light)
Thursday: Chicken w/ Sun dried Tomato-mushroom Sauce (cooking light)
Friday: Chicken Cheddar Chowder--one of our all time favorites--also cooking light
Saturday: Quick Coq au Vin (Cooking Light...again)

Cheddar Chicken Chowder from Cooking Light is one of our all-time favorites. When it's rainy and cold and I need something easy to whip up, I almost always have the ingredients on hand for this super soup. I'm glad to know the Louden Family likes it, too!

Can you post a review of the potato, leek, and ham gratin? I saw the recipe and wanted to give it a try...your family can be the guinea pigs instead.

Erica--sorry I forgot to take a picture BUT I did freeze 1/2 of it and will serve it again either this week or next.
