
This is a picture from the last time I made tomato soup--last week. Its so good, I don't think I can wait until tomorrow. I think I am going to make it tonight.
During the summer--when tomatoes were at their peek, I froze a freezer worth (say that 5 times) . Although I would not use them for salads or sandwiches, they are great for sauces and soup. I don't know what this recipe would taste like with canned tomatoes and fresh tomatoes in December taste like paper.
To make this tomato soup, I puree as many tomatoes as I want to eat and add pepper flakes, minced garlic, basil and salt all to taste. Maybe a little cream but no more than a tablespoon or two. Simmer for about 20 minutes, sprinkle with shredded Parmesan and eat.

I would like to try this. I am not a fan of the tomato but I have always liked tomato soup (go figure) but I have only had canned. Don't fall out of your chair.
Do you recommend waiting until tomato season or make it out of tomatoes now even though you think they taste like paper?
I made this AGAIN last night with Trader Joe's Organic Diced Tomatoes and it was reallly good. I would not make this with fresh tomatoes in Decemeber....they are gross!
I pureed the diced tomatoes and thinned it with chicken broth.
Canned tomatoes and the occasional canned bean are the only two canned items I would buy as they dont lose their nutritional value in the canning proccess. Canned beans are often in a salt water solution but their are brands you can find w/o.
