
Our neighbor shared her chicken pot pie with us over the holidays. It was so good Dave and I ate the whole thing in one sitting...we shared with the little people, of course. I got her recipe and made it the other day. Not only is it good, it's easy, can be made ahead of time, or freeze it and heat another day.
Ingredients:
3 T butter
3 T Flour*
1/2 t salt
1/8 t pepper
3/4 C chicken broth
1/2 C white wine
1 C half & half
1 t chicken bouillon granules
2 C Cooked Chicken
2 small-medium potatoes, cooked and cubed (about 1 1/2 cups)
2 C vegetables of your choice**
1 t Thyme
1 t sage
Pie crust of your choice***
Directions:
pre-heat oven to 425.
1. Melt butter in a 3-quart saucepan over low heat. Stir in flour salt and pepper. Cook, stirring constantly until mixture is smooth. Stir in broth, wine, half & half, bouillon and herbs. Heat to boil. Stir in chicken, veggies and potatoes.
2. Pour chicken mixture into pie pan lined with raw pie crust. Add top crust and seal. Cut slits in top crust to vent or lattice crust (as seen in the picture).
3. Bake 35 minute or until golden brown. Allow pie to sit for 15 minutes before cutting into.
Yield approx 6 serving.
*I used whole wheat flour
**my neighbor used an 8 to 10 oz bag of frozen peas and carrots. I used random veggies that I had in my refrigerator/freezer. I used a total of 2 cups of peas, cooked parsnips and raw crimini mushrooms. both were great.
***certainly you can make your own pie crust, but if you don't have time you can buy one. I picked up a whole wheat pie crust from Whole Foods. Remember to read labels, items like pie crusts can have some junky ingredients.

My friend Susan from my mommy support group referred me to this website. I made this Chicken Pot Pie (first time I made pot pie ever) and it was AWESOME! I added onions and mushrooms and gave them a quick saute to make them soft before adding them to the peas and carrots veggie mix. My husband loved it and we will definitely make it again. It sure beats the frozen pot pies our moms used to serve us. Now I'm trying to figure out how I can make individual ones for single serving size.
KlKelley, thank you for visiting my blog. Individual pies are just as easy as one big one. All you need is small (personal sized) baking dishes. You can pick those up at Crate and Barrel or any cooking store.
If you are using commercially prepared pie crust just let it thaw on the counter for a few minutes which will allow it to become workable. Cut it in the demesions you need. Remember that the bottom crust is optional. Enjoy!
