
Let us talk about breakfast, after all it's the most important meal of the day. Do you eat enough protein in the morning? What about fat? Your brain and body need both in the morning for a good start. What’s a mom going to do when all their kids want are pancakes and waffles? Like anything, make it healthy.
This is my pancake recipe. The kids love it. Although I would prefer them to eat eggs everyday, the occasional homemade pancake is fine too. I sprinkle a little cinnamon and powdered sugar on top to add a little sweetness.
1 C oat flour
1 1/2 C Wheat Flour**
1/2 C regular cottage cheese
1 t vanilla
2 eggs
2 C milk
1/2 t baking soda
In a bowl, combine dry ingredients and mix. Add everything else and blend well. You can add more milk if you like your pancakes thinner.
**NOTE: You can use any combination of ground grains or in other words, other flours. Variety is key with nutrition, so mix it up! You can also add items like Cinnamon and dried coconut. I also add flax meal, and ground psyllium husks too.

Hi, I live in Sacramento and where can I find inexpensive hormone free chicken as this is the meat we enjoy the most? I've been using Costco chicken tender breast for $15 a bag. Thanks for your suggestion about the farmer's market, that is probably the cheapest way to get the best quality organic veggies. Our budget is about $100-$120 a week, but I'd love to be able to stick to a budget, I always go over it.
Hi Steph, Right now (until Tuesday) whole organic chickens are on sale at Whole Foods for $.99per lb. The butcher shop at Whole Foods always has a variety of meat on sale. The butchers will chop them up for you if you prefer. My husband is not a fan of dark meat so I use that in soups/stews/pot pie, etc., as the other ingredients mask the texture.
Dee's Meats in Elk Grove (and Galt) is another great place to find high quality meat. Some people buy meat at Trader Joe's...I do sometimes as well although I find the quality much better at Whole Foods and the prices similar. For us, its about buying whatever meat is on sale behind the case at WF's and then menu planning around.

Amanda, I tried your pancake recipe and was so excited because I love pancakes. But, I have to say yours did not work for me. I couldn't get the insides to cook. I added a bit of salt and baking soda and that did the trick. They were able to bubble a bit while they cooked. It made me wonder, is baking soda unhealthy or is there a reason that this pancake recipe doesn't incude either baking soda or baking powder? I know you need to buy these products without aluminum, but other than that, are they okay?
Hi there, Sorry they didn't work for you. I know what you mean--they dont have they same fluffy consistency without the baking soda. My kids dont mind and I omit it because it's another step. Different flours also create different textures--so play around. I like to add a little more milk and make them more like crepes sometimes too. A low temp will also help the middle cook, but again they aren't the light fluffy pancakes we're used too!
Baking soda is fine, by the way.
