Wild Rice, Veggies and Turkey Sausage

I wanted to post this recipe for my new friends Terri and Kristy. I have enjoyed getting to know them over the past several months through our children's school. We were talking about this recipe at the park today. It was really fast and really great.

To save time I started the rice fist---wild rice takes a while. As that was cooking I chopped the veggies and put the sausages in the oven (they could have been cooked on the stove).

I tossed the veggies into a dutch oven on the stove, lid on, for about 30 minutes.

Veggies I used:

2 to 3 cups cups chopped asparagus
2 medium red onions, chopped (I like big chunks)
1 cup sliced mushrooms
3 medium carrots, chopped
3 cloves of garlic, finely chopped
a couple of tablespoons of olive oil--less if you like
a couple of teaspoons of balsamic vinegar--more or less if you like
salt, pepper and herbs to taste--I used basil and thyme.


I find the acidity of the vinegar brings out a wonderful savory flavor in the vegetables.
