
This is my favorite pasta salad....or at least a variation of my fav. I use the Trader Joe's "Harvest Blend" which a mix of cous-cous, orzo, quinoa, and baby garbanzo beans. Add seasonal veggies, feta, pine nuts, olive oil, balsamic vinegar, and lemon pepper.

Monday- Grilled Chicken and above salad
Tuesday-Citrus Chicken and spring veggies (Cuisine at Home, April 07)
Wednesday- Halibut Cakes
Thursday- French Basil Chicken in Crock pot**
Friday- Brauts, and cabbage/lime slaw
**First Time I'm making this--we'll see how it turns out. It's from my favorite crock pot chef, Judith Finlayson. I don't like all of her recipes, but I love that she writes about crock pot cooking and there's no mention of tater-tots or a can of condensed creamed soup.

I made the Harvest Blend salad loosely following what you did. Yummy! I steamed red peppers, yellow squash, zucchini and green beans to crisp-tender and added them to the pasta mix. The feta and pine nuts really round the flavors out well.
That's the great thing about this salad, you can throw in almost anything and its great! Olive oil, balsamic, pine nuts and feta seem to be the staple.
