Weekly Menu:
Sunday- Homemade Corned Beef * Purple Potato Salad and Cabbage/Carrot Salad.
Monday- Crispy Chicken Salad Wraps**
Tuesday- Sauteed Lemon Chicken** Wild Red Rice and Snap Peas
Wednesday- Chopped Cobb Salad**
Thursday- Black Bean Chili in the Crock-Pot**
Friday- Chicken Pita's w/ Tatziki
*This is another example of my theory that ANYTHING can be made well or poorly. Corned beef is typically thought of low grade boiled beef...and it is, when you buy it at the store. However, this is no ordinary corned beef. Using our favorite Penzeys spices, my dad has been experimenting with homemade corned beef. We are going to happily be his guinea pigs tomorrow.
