
Here is the "Kid Version." Notice this is a variation of what we adults are eating. Keeping things separate didn't take any additional time and allowed us to sit in peace and discuss the day.

Here is the roasted chicken in the (lidless) dutch oven. I roasted a whole chicken (had the butcher chop it up) on 350 for about 35 to 40 minutes. Until internal temp is around 170. Let sit about 15 minutes and then pull as much of the meat off as needed for tonight's meal. reserve any leftovers for tomorrow. This chicken should get a family of 4 through 2 meals. Remember portion control. Most people need animal protein, just not an entire bird.

Assembling the sandwich. Initially I thought I would roast the peppers but I ran out of time so they got sauteed with some purple onions in a pan drizzled with olive oil, balsamic, and sea salt. While that was cooking and the chicken was already out on the counter, I toasted some whole grain sourdough bread in the toaster oven. I added some aged cheddar and let it melt. I pulled some meat off the chicken, through on the peppers/onions mixture and topped it off with the beautiful basil.
If Dave were home, he would have added mustard.
PS you can either eat it open faced or add a top slice of bread.
