These are fish cakes...like crab cakes, but made with leftover halibut. The salad is white bean and fresh local corn (first corn of the season) tossed with lime, honey and chopped lemon basil.
Below is Kid #2 Eating Fish Cakes, Oatmeal and Whole Fruit smoothie for lunch. Sounds like a gross combo I know, but for my picky kid, this is par for the weird-combo course.

Last year, I had a come-to-Jesus meeting with myself. I had to come to terms with the cold hard truth: my kids are picky eaters. No matter how many vegetables I bring into this house, and no matter how well I can cook, my kids eat squat. They would rather eat (hot or cold) cheese sandwiches every day of their life. For several years I fought and/or bartered, especially with Kid #2 --he's stubborn and defiant....hmmm wonder where he gets that from? But last year, during my meeting with YOU KNOW WHO, I decided no more fighting around food. No more bartering, no more deal making....we are going to have a peaceful table. Now, I am accommodating (within reason of course). If the kids don't want to eat what I make, then they can have their cheese sando. I use high quality sprouted grain bread and hormone free cheddar cheese, and I don't fret over the lack of variety.
Hubby and I are good role models for healthy eating, and we talk constantly about healthy food choices. I keep my fingers crossed that my boys wont go off to college eating just bread, cheese and fruit. I also say things like "boys, when you are a little older, you are going to want to date girls...and girls like boys who eat veg."
And GUESS WHAT? Now, after a good solid year of a peaceful table, my kids (including Kid #2) are becoming adventurous eaters. They are branching out in their variety and willingness to try my food. By simply taking away the "control" I have opened the door.
Today, when picky kid #2 finished his bizarro lunch, he said, "Mom, I sure am a lucky kid to have all this food."

Kudos to you for making such headway with your picky eaters. I think it's just more proof that eating preferences can be highly psychological (am a big fan of that concept) -- and that we can always change for the better!

I love fish cakes! And I love the idea behind your blog... planning is everything (says the woman who joined a CSA and has to make meals out of whatever arrives on Saturdays with no ability to plan ahead!)... especially with kids in the house!
