
Again, let's hear it for non-lettuce salads. Well, this one has arugula...is that considered an herb or a leafy green? Debatable.
Ingredients
Soaked quinoa
handful of chopped arugula
handful of chopped basil
non salmonella contaminated tomatoes
low moisture mozzarella
olive oil
vinegar
salt and pepper
all to taste.

This looks like the perfect summer meal. Arugula has to be one of my favorite letuce-herb things.

Now, this brings up a question I have about soaking grains.
I LOVE quinoa, but have trouble with occasionally overcooking it. So, soaking it would completely solve my problem. Wouldn't it?
Quinoa cooks up pretty quickly. Soak it, drain it, fill it back up with water (or liquid of your choice) and then cook for about 10 minutes. Again it cooks up fast.
