My husband will be gone for a few days which means I don't have to consider his palette or his lunches when meal planning this week. This week its about my favorite: The sandwich. The perfectly balanced sandwich.
Monday: Turkey Bacon BLT in a pita w/sprouts
Tuesday: Chicken basil sandwich with green leafy lettuce and roasted peppers
Wednesday: Halibut Sandwich
Thursday: The burger w/ sweet potato fries
I'm also going to throw together a salad with wild rice, sweet corn, black beans, and cilantro for a side dish.
