Fish Taco's w/ Nectarine Salsa

What do you get when you mix nectarine and avocado salsa with fresh halibut?

Heaven on a blue corn tortilla.....




We have a lot of salmon from Hubby's week in Alaska. Our friend, Hank Shaw, has a lot of halibut from a recent fishing trip in the San Fransisco bay. What do two people do with all this fish? SWAP. Besides hunting, fishing, gardening and cooking, Hank also writes Fish and Seafood Cooking for About.com.


Super Easy Salsa


1/2 medium nectarine, chopped
1 avocado, chopped
1 green onion
Jalapeno, enough to add spice and not enough to make you cry, chopped fine.
juice from 1 lime
salt to taste

Halibut



I cooked it in a lightly oiled cast iron skillet on the stove for a few minutes on either side. Salt, pepper and fresh lemon juice was all that was added to this perfect specimen.

mmmmm looks tasty. I have a cilantro honey vinaigrette I like on salads that would be good on top of this, or on top of a green salad served with this. Basically I blend all these things in a blender:
1 tbls honey
3 tbls olive oil or veg oil
handful of cilantro
salt and pepper
½ tbls Dijon
1 lime, squeezed
½ -1 roasted jalapeno (optional)
It's super tasty. Also good as a marinade for fish and chicken I have found.

Nectarine salsa! Well, that looks tasty.

Our stand-bys are always pineapple and mango, so this will make for a nice change. Thanks for the idea.

Nectarines, huh? I was thrown because they are white nectarines -- they look like radishes in the picture. Were they firm or soft? Super-sweet or just midly so? Nice idea.

I am very glad you liked the fish! Hope you like the chickpea flour idea, too. I will try using the coconut flour you gave me this week...

Hi there, yes white nectarines, they do look like radishes. On the firm side--but ripe. and sweet but not super sweet. I have some yellow nectarines from a friends tree that are super sweet by comparison.

Taco Fish La Paz in Guadalajara, Mexico has a stand on Avenida La Paz in Guadalajara sounds like ‘Taco Nirvana’.

My experience in Mexico is that some of the best places to eat are those that are off the beaten path that the locals frequent.

I’ve been looking for good places to eat in Guadalajara and Taco Fish La Paz in Guadalajara sounds like just the place.

Fortunately, I live in Ajijic, Jalisco so the trip is a short one.
