Grain-Tomato-Cucumber-Basil Salad

I say this a lot, I know....I love non-lettuce salads. They really are a perfect healthy meal or snack. They keep well in the refrigerator for several days, and are easy to make. What's not to love?


Ingredients (all to taste--this is not rocket science--just start throwing the ingredients in a bowl, you cant go wrong)

Trader Joe's Brown Rice Medley (Brown Rice, Black Barley, & Daikon Radish Seeds)*
Cherry Tomatoes, cut in 1/2
Cucumber, pealed and chopped
Green onions
Fresh Basil, chopped
Olive oil
White wine vinegar
juice from 1 lemon
Black pepper

* Dont forget to soak/sprout your grains.

Word on the non-lettuce salad thing. Ever get into a salad rut and feel as if you never want to look at piece of lettuce ever again?

i can't decide what I love more: making up salads or making up salad dressings. both are a lot of throwing random things together and hoping for the best.

I need to get more creative with salad dressings. I tend to stick with basic oil/vinegar.
