Italian Peppers

How many ways can you stuff an Italian pepper? A million....totally not exaggerating. My friends, Katie and Glenn, turned me onto sweet Italian peppers last summer. Italian sweet peppers look like Anaheim peppers but are milder than a bell pepper. Their skin is very thin and delicate, easy to stuff and eat. They are a perfect pepper.

After cooking, before scarfing



Stuffed Italian Sweet Peppers

Chicken (leftover from last nights dinner)
Chopped tomatoes
Parmesan Cheese
Salt and pepper

Slice open and seed pepper. Stuff ingredients. Sprinkle salt and pepper. Roast in a toaster oven for 15 minutes on 450.

Those look positively delish.

You know -- I never thought to STUFF an Italian pepper. How lame is that? I think we'll be trying those out when we find peppers at the market this year!
