Potato Ho-Down, Sweet Potato Fries




Okay, I am taking part of a blogging event called the Potato Ho-Down, started by two fellow food bloggers, The Noble Pig and Evil Chef Mom. This cyber space event will take place every 3rd Wednesday of the month and entails posting a favorite potato recipe. Not hard, considering I love the little spud.

Sweet Potato Fries



This really is not a recipe.

Simply cut your sweet potatoes, lightly coat with olive oil, salt, and cayenne pepper (optional). Lay the cut, oiled, salted spuds in a single layer on a baking sheet. Bake approx 30 minutes on 450.
I would like to add some commentary about the sweet potato. I am not a fan of the mushed up slop of a sweet potato that some top with marshmallows and maple syrup. Whenever I see that casserole at a potluck or family dinner, I wonder what did that poor potato do that would cause someone to mistreat it so. I don't understand the logic behind it...who thought of putting marshmallows on top of smashed sweet potatoes? And why would it stick as an American classic holiday dish?
Anyway there's my rant. Enjoy. Oh, by the way my potato-ho name is "Peaches Marie". I apologize in advance if having a potato-ho name offends anyone.

I am the biggest fan of sweet potato fries with a little BBQ sauce...mmm!

I love a good roasted sweet poato. I can't stand the mix of sweet potatoes and too much sugar and marshmallows either. I like my sweet potatoes mixed with something sweetand a little spicy like chipotle powder or smoked paprika or cayenne with just a pinch of brown sugar and plenty of salt (I'm a sweet-salty lover).

Those look good! I just made some baked sweet potato fries as well. I like the slightly crunchy outside and soft, warm and sweet inside.
