Weekly Menu, July 28th

My mom is always doing things in order to get a mention on my blog (I'm not complaining--her gifts are usually edible). Yesterday, my parents brought over a couple of pots filled with basil, chives, and parsley.



Luckily, I had a drip line just waiting to be useful. Thanks parents--you're the best.


Weekly Menu

Monday-Stuffed Chicken breasts, horseradish mashed potatoes, and grilled squash
Tuesday- Meatball Sandwiches ( I might try to make the bread from scratch)
Wednesday- Beef Taco's with guacamole
Thursday- Chili
Friday-Pulled pork

Friends of ours were just telling us that they were trying a very involved recipe from CI this past weekend.

Do you have a recommended recipe?

Hi Lo- for weekday puuled pork I throw it in the crock pot for 8 to 10 hours with some water (no seasonings). when its done, I put in on a cutting board and cut away any remaining fat and "shredd the meat. Most of the time I divide it into two, one for pulled pork and the half for another meal (usually tacos). I then mix it with our favorite BBQ or homemade mop sauce.

On the weekends, Hubby will do it on the smoker -- its more involved and tastes amazing.

is that purple ruffled basil i see in that pot!? we're growing some right now and I wish we had more (we only bought a small plant w/ like 2 stalks) - it's so beautiful!!

We are never full- Yes! and its delicious. Just chopped some up to top my eggs.
