Lately, I have been writing a lot about school lunches. But what about you, the adult? What are you eating for lunch? Does it come in a box and require microwaving? Does it have 49 ingredients that sound more like a science experiment than food? STOP IT. Let's make soup.
In the summer I like to make salads; green salads, and grain salads, even the occasional pasta salad. Nothing says summer like salads. But now it's fall, my favorite time of year: soup season. Both hubby and I love soup...creamy soup, tomato soup, broth based soup, chowders, stews and chili's. The only soup my husband does not like is his mothers.
In the cooler months I like to make large batches of soup for my lunch each day. Soups can be made in the crock pot, last for several days in the fridge, freeze and defrost nicely, and like their summer counter part the salad, recipes for soups are endless.
Busy people listen up: making large batches of soup is your ticket to healthy lunches for the next several months. Make your soup, place individual servings into glass Pyrex bowls. Viola, your own preservative, additive free meal in a bowl.

Oh, yes! We love taking soup for lunch during the winter months. A vat of soup made on Sunday will feed the two of us for most of the week.
... and thus developed my love affair with Pyrex :)
