Spelt, a Lovely Grain

This is Spelt. Spelt is an ancient grain. A form of wheat. It's very hardy. I think its a lovely grain. Instead of pasta salads, I make "grain salads" fairly often. Grain salads made with spelt are especially tasty. This grain has a nutty flavor...almost like walnuts.





Today, as I was soaking my grains, I noticed that a few of the grains had floated to the top.





Take a close look at this little piece of nature....




The grassy part of the grain is still intact. I couldn't help but stop and think about these little grains and what they must have looked like in their natural environment.

I can clearly imagine these blowing in a breeze somewhere on a hillside in northern California. Tall, grassy, amber grains.

I took a moment this morning to really look at these little grains, and I felt a profound sense of peace knowing that I am eating something today that someone had on their plate 4000 years ago.

I know, I know...I'm a little nutty especially when it comes to food.
