
Yum these were good.
Ingredients
1 very ripe banana
1/2 C whole fat plain yogurt
2 eggs
1 1/4 cups milk
1 t vanilla
1/2 t nutmeg
1/2 t baking soda
2 cups oat flour
Directions
In a bowl mash banana and yogurt together until creamy. Add milk, eggs and vanilla and mix well. add all of the dry ingrdients. (Add more milk if they are too thick, add a little more flour if too thin.)

I've not cooked with oat flour before, but I'll bet its fantastic for something like this!
