
In this picture, the meal is already frozen. Why did I immediately freeze the other half of this meal and not save it for leftover lunch like I often do? Two reasons:
1. Because I carefully and thoughtfully planned my meals, I have plenty of chicken pot pie for leftover lunch through today. Tonight I am cooking the black bean chili which, along with a green salad, will serve as a perfect lunch Wed- Friday.
2. Do you ever have those days where you look at your calendar and think How am I ever go to find the time to cook a healthy dinner? Of course. It is by far the number ONE excuse (and it is an excuse) I hear for not cooking real meals. So next week, on the day that I "can not find the time" I know all I have to do is reheat my beef bourguignonne. YUM.
Fast and easy....just like the drive through only way, way better.

Amanda - You do great things with a crockpot, woman. At this point, I haven't quite made friends with mine (though I own multiples, which I use to keep soup warm on soup nights). I've got some learning to do... it seems to make things quite convenient!
I really really love my crockpot. It saves me when we are running from school to soccer and I dont have time to cook in the afternoon/evenings. I throw everything together in the morning (or night before) and hit LOW. Fabulous invention.
Check out the cookbook: The Healthy Slow Cooker by Judith Finlayson. SHE does amazing things with the crockpot. I really insightful cookbook. She does a lot of things in steps which is different than me. I just throw everything in together. I'm sure her stuff looks better but I going for taste and ease!
