I noticed your post on soaking grains, I have a couple of questions.
Do you cook in the same water that they soaked in?
If not how much water would be added to the grains after draining?
thanks
Hi there, Grains (like beans) contain phytic acid. Phytic acid attached to vital nutrients like minerals and strips them from your body.
When you soak the the grains (or beans) you are releasing the phytic acid into the water. Toss the water out. How much water to add back in depends on the kind of grain and how long you soaked them. Instead of giving a special amount, I simply fill the water back up to the level of the grain (or just slightly above) and cook on a very low heat. Make sure you monitor your grain--you might have to add more water for desired tenderness.
Soaked grains typically take 1 to 15 minutes to cook. Which is really nice when you want "instant" brown rice.
Thank you for the question.
Sounds like a yummy line-up!
Amanda - This menu is looking good. That bisque sounds good and packed with great ingredients... and I love the idea of using the na'an as sandwich bread!
don't you love when you have a great homemade meal waiting in the freezer? It is even better when you forget it is there and viola! it suddenly appears when you most need it.
