Cranberry Sauce

DON'T BUY THE CAN. This is so easy, my 6 year old made it by himself. No joke.

1 Pkg (about three cups) of Fresh Cranberries
1 Cup Apple Cider or Juice
1 Cup Sugar*

Mix together in a medium sauce pan, stir frequently. Simmer on medium heat for approx 15 minutes.

* I tried to cut back on the sugar but I don't think it would fly with guests used to a can of cranberry sauce.

What to do with leftover cranberry sauce?
I made this to pour over some goat cheese for an appetizer. Serve with crackers. So good.
We are using the leftovers as "cranberry jam."

Oh, heavens no!
Admittedly, the can of cranberries has a bit of nostalgia attached to it (at least for me), but only whole cranberry sauce will do these days!

We like a grown up version made with a bottle of zin... but this is very nice. I like the idea!

Oh I'd slap this on a turkey sandwich in a minute. Homemade is so, so yummy.

My mom makes cran sauce the same way, though the cup of sugar bums me out. It's still awesome compared to canned!

I use orange juice (and the zest of an orange) instead of cider, apple juice or water. Just about any liquid that complements cranberries will do.

I decided to use your recipe to make the cranberry sauce this year (modified by pureeing half the berries to make it more jelly-like). It was such a hit that my guy decided to use it for Christmas presents in this painful economic climate.

So this past weekend, we bought lots of canning jars and cranberries, etc. and made a huge vat of sauce. The jars are filled with bright ruby red berries and sauce and decorated with green ribbon. 24 filled jars cost less than $40…the least expensive Christmas ever, with no added preservatives or chemicals!!! It was a lot of fun to do our first effort at canning, too. And a big bowl of sweet sauce left over! So good in yoghurt instead of packaged chemicals.
