Wild Pig with Kale Slaw

WARNING: This is not the meal to make if you are trying to look cute while you eat. It's quite messy.


Okay, this was not on the meal plan for the week...a little improvisation was at play. And I am so glad it was, these were great.


My uncle Bob likes to hunt, and we like to eat his kill (sorry, a little graphic). We do not eat a lot of pig at this home, because it is very difficult to digest and often loaded with toxins. However, there are always exceptions and this is one of them. Wild Pig.

Dave smoked the pig for 13 hours. Then he pulled it apart. Today I warmed some in a cast iron pan with some bottled BBQ sauce and added the kale slaw. Enjoy.




Kale Slaw
1/2 Medium head of kale, finely chopped (I put mine though the processor)
1/2 bunch cilantro, finely chopped

Dressing
2 limes, zested and juiced
2 small cloves garlic, minced
1/2 t minced and seeded jalapeno
3 T Water
5 T Mayo
2 t Honey
1 t salt


Mix dressing ingredients together in a bowl then add to the kale/cilantro mix. yum, yum.

This recipe is adapted from my friend Katie's famous spicy lime slaw.

that kale slaw sounds lovely. i'm impressed that you guys smoked a whole pig!

This is fabulous, Amanda. I'm loving the kale slaw... nice variation on the typical! I'm thinking that might be nice on fish tacos!

Heather, not a whole pig, just a part of one!

Lo-it would be great on fish tacos, or even plain. I think its fabulous...I love a good slaw.

I don't think I'll be finding wild pig in my kitchen anytime soon but I love the idea of pairing with tacos. That photo looks like a reinvented healthified Sloppy Joe :-)
