Apple Cake




If you want a really good apple cake full of sugar and everything good, go directly to Bunny's Warm Oven and look at the original recipe for this Apple Cake. She makes the most wonderful desserts. Mine are not hers.


If you want an apple cake that tastes good and won't send you into sugar shock then try the Daily Diner version. I like it, my kids love it, and everyone who tasted it said it was really good...of course they could be lying.



Ingredients:


1 cup sugar (Sucanat)

1 cup Apple Sauce

4 eggs

1/4 cup orange juice

2-1/2 teaspoons vanilla extract

2 3/4 cups Spelt flour

3 teaspoons baking powder

1/2 teaspoon salt

4 medium apples, peeled and cubed

2 teaspoons ground cinnamon


Cream Cheese Frosting (optional)



Directions: In a large mixing bowl, beat sugar, apple sauce, eggs, orange juice and vanilla until well blended. Combine the flour, baking powder, cinnamon, and salt; gradually beat into sugar mixture until blended. Stir in apples. Spread into a greased 13-in. x 9-in. baking dish.


Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Garnish with cream cheese frosting and additional cinnamon if desired. Yield: 12-15 servings.



Cream Cheese Frosting


8 oz of Cream Cheese

4 T of Evaporated Milk

1 Cup Powdered Sugar


Mix well until smooth

Oh, Yum! I just got my hands on some winesaps today to make your applesauce...looks like they'll be cake instead! I just got hubbie approval for a grainmill- have you ever ground whole corn in your Nutrimill? Or Chickpeas?

Hi there, I grind corn (popcorn) all the time. one of my favorites. Chickpeas too, although not as regularly as corn. Just make sure the chickpeas are dried.

I approve! I love a nice (even healthy) dessert every now and again. Even better when you only have two people to eat it all up!
