Weekly Menu, February 15th

Sunday- Tamale Pie
Monday- Grilled Chicken and roasted veg
Tuesday- Vegetarian Lasagna
Wednesday- Chicken and mixed green salad
Thursday- Turkey and Buffalo meatloaf, mashed potatoes and creamed collard greens

I'll be eager to hear about the turkey & buffalo meatloaf. Buffalo and venison share some properties, and I've been contemplating a "venison" meatloaf in our future... but am not exactly sure how to approach it.

Hey low, I have made this many times before. The key is to use ground turkey thigh and add fat because both are so lean and there for can be dry. Fats that I like to add are olive oil and/or cheese (feta or blue).

Super yum!
