Day Three: Chicken and Tortellini Salad



This is how I like to eat: at home, fast, and tasty.





Remember that tortellini picnic salad and grilled chicken hubby and I made on Sunday? It's still providing quick and easy lunches.





Today, I finished off the last little bit of the tortellini salad (about 3/4 cup), added 1 chopped up chicken thigh, 2 cups of chopped broccoli, and about 1/2 cup of the Persian herb trio. I spruced it up with a splash of apple cider vinegar, walnut oil, and Penzeys lemon pepper.


Notice the amount of pasta compared to the rest of the stuff. If you are going to eat pasta, which is a solid "c" food on my rating scale, make sure to top it with plenty of good things.

Yum. I've got to tell you that I've been drooling ever since I spied that Persian food... but this looks like a seriously good salad. Yum. Amanda, you've done it again. Fast and delicious is your speciality.
