Polenta Mex Dish

Because I lost my list, I improvised. We always have "popcorn" in the house because the Hubster and the kids love to make it as a snack. Since Christmas (when I got my flour mill) I have been addicted to milling popcorn into cornmeal and making polenta.





Polenta: 1 cup cornmeal to 4 cups liquid (water or broth or cream). I also add a couple teaspoons of butter and about a 1/4 cup shredded parm. Boil the liquid, stir in cornmeal cook for about 15 minutes stirring constantly, pour into 9x 13 inch pan and let cool. Will harden. Can bake or grill
to warm and/or brown, or just consume as is.


The rice is cooked brown rice mixed in with some cilantro chutney.


Salsa was made by Hubster.

Shredded beef is spiced up with some cumin and salt.

Ooh grinding popcorn! Neat! I have yet to grind anything but spices.
