Weekly Menu, March 15th

Sunday- BBQ'd London Broil with Tortalinni Picnic Salad served on Butterleaf and Arrugula salad.

Monday- Grilled Chicken* in Pita's with feta, mint, basil, and cilantro, and a yogurt sauce.

Saint Patty's Day! Corned Beef and Cabbage along with Carrots and Potatoes....boiled to perfection

Wednesday- Roasted Whole Chicken, with Creamed Spinach

Thursday- Mexican Chicken Soup


* Today, the Hubby is going to grill up the London broil and the chicken for Monday's meal. Like usual, he is going to grill up enough to be eaten (for lunch) for most of the week. I am currently obsessing over the delicious combination of Arugula and butter leaf lettuce. It's a great base for a scrumptious green salad. Although I like light vegetarian lunches, hubby needs the complete protein throughout the day, so he will take the salad along with some of the meat for his lunches at the office.
