Breakfast of Champions


Breakfast is the most important meal of the day. I always take a minute or 5 to make breakfast. This beautiful and wonderful breakfast really did take under 5 minutes to put together. Using two buttered skillets, I cracked two eggs into one and a tortilla into the other and cooked until each was done. While those were cooking, I got out Hubby's homemade salsa, and an avocado. Put it all together and that's what I call FAST FOOD.

Wow, looks great! Recently we bought farm fresh goose eggs and let me tell you, one big goose egg in a pan with some herbs is an easy and delicious breakfast! We gotta go get more of those :-)

I keep eyeing the goose eggs at the Market. I might have to pick one up. They are $5 an egg here so I have been passing on them for now. Good to know they are great!

FYI - I call that meal "Huevos Salvadorenos". Our family version is ever so slightly less healthy...and not sure it actually has any Salvadorean origins. But whatever - very tasty. and FYI the Sunday farmers market has duck eggs and those are good too.

Bet this is faster than pulling through a drive-through window. :) Looks positively gorgeous too.

Never had a goose egg myself, but I'm imagining they're just fabulous. Maybe a bit more beneficial fat than a regular old hen-laid-egg??
