The main ingredient in Humus is garbanzo beans. When made with fresh garbanzos, humus is green.

Very serious work. Although I am pretty sure that shirtless cooks are against the California Health Codes. So is child labor, whatever.

I must say, I've never grown garbonzos... and I haven't seen them at the farmer's market in their fresh state either. Bet this hummus is gorgeous... and I don't just mean the color!
Aren't you supposed to cook the beans first?
Hi Zack, you do not need to cook the chickpeas/garbanzo beans. They are tender enough raw. So YUM! I made more and am eating it right now!
Now WHERE do you find fresh garbanzo beans? That would be awesome but I've definitely never seen 'em anywhere. Been meaning to try a green dip with edamame though, similar but with an asian twist.
They grow locally here in Northern/central California. Several venders at the farmers market are currently selling them. I didn't know they were a hot commodity!
Lucky you. I tried making a raw hummus before by sprouting the dried garbanzo beans first, then blending it all up w/ the rest of the ingredients. It was surprisingly bad. I hated the flavor of the sprouted garbanzo beans. That makes me a little afraid of eating raw garbanzo beans...

Hi there, good question. Sprouted beans do have a very...um..."sprouty" taste! I actually like the flavor.
Unsprouted raw beans don't have that earthy flavor. Add salt and I dont think you can taste a real difference...although again, I like the the sprout flavor too.
