Weekly Menu, June 1st

We are moving this week which can make meal planning and cooking somewhat hard. When Hubby and I were drawing up the weekly meals we were thinking "quick and easy, quick and easy!"

Sunday- Grilled Tri-tip and asparagus, portabellas, and onions (this combo is a seasonal favorite currently)

Monday- Bean Soup (in the crock pot), green salad, with leftover.....planover grilled asparagus, mushrooms and onions w/ a blue cheese dressing.

Tuesday- Salmon Cakes over mixed greens

Wednesday- Roasted Chicken and early summer squash

Thursday- Chicken Tacos


**Note: we will be eating soup, steak sandwiches and an additional grain salad for lunches. All are already prepped and conveniently in the refrigerator. No drive thru's even in the busiest of times.

Wow -- you guys have eaten well, despite the impending move. And I'm impressed by your dedication. Busy times are the hardest to keep from falling back into bad eating patterns at our house!
