I am totally UNINSPIRED to cook this week after a fun filled weekend camping. Not sure if it's the amount of preparation it takes to camp with a family of four (and a dog), the amount of filth one said family acquires, or the amount of laundry that I have to wash, fold, and put away that has left me lazy, but whatever it is I am uninspired to cook.
Since starving your family might be viewed as abuse, I will have to whip up something. This week we are eating easy....really easy.
Sunday- Massa Organics Brown Rice and chicken bowls w/ fresh corn, cilantro and peppers
Monday- Tomato Salad w/ grilled lamb
Tuesday- Fish Tacos w/ nectarine Salsa
Wed- Grilled Eggplant Sandwiches
Thursday- Taco Salad

Seeing that 1st photo made me nostalgic for some of our old family camping trips when I was little. I seriously got all weepy! I miss those days. Can't wait to take my kids camping!
