I love a good Bacon, Lettuce, Tomato and Avocado Sandwich. So quick and easy, these make a great QUICK lunch or dinner when in a hurry. Make the bacon ahead of time and leave in your refrigerator for later use.

Weekly Dinners
Sunday- Moroccan Lamb Stew*
Monday- Polenta, Gruyere, and Sausage one-dish bake (aka casserole)*
Tuesday- Baked Halibut with cilantro sauce and green salad w/ yogurt based dressing
Wednesday- Cheesy Eggplant and Tomato Bake*
Thursday- Stuffed Chicken Breasts and Lentil-Veg Salad
Thursday- Stuffed Chicken Breasts and Lentil-Veg Salad
Friday- Greek Beef Stew*

When "good" tomatoes are in season, I have a really difficult time turning down a BLT. And a BLT with avocado?? YUM. Of course, that's when I get jealous of you. In California. You won't find avocado trees growing around here... maybe a rare black mark against WI, no?
WHAT! NO AVOCADO's! That is crazy talk. Seriously? wow, I am in shock. I am feeling spoiled with my (nearly) year round avocados.
I envy your year round avocados, I have yet to learn how to pick a good one from the market, and then actually use it before it goes bad. The going bad part seems to happen very quickly.
