I immediately started craving this delectable sando, and adapted the recipe to the seasonal veg in my garden.
This could be called either Inspiration Sandwich or Divine Sandwich sent from Heaven above created in the image of all things delicious. A little dramatic, I know.
This simple vegetarian summer vegetable sandwich is oh.so.good.
Recipe
Eggplant, sliced very thin
banana peppers, seeded and butterflied
shitake mushrooms, rinsed
1 clove of garlic per sando, minced or pressed
basil
tomatoes, sliced
butter
olive oil
salt
Dutch Crunch Roll
heat oven to 425 degrees. Drizzle oil, salt and pepper over eggplant, peppers, and mushrooms, roast for approx 10 minutes.

Meanwhile, schmere butter and garlic onto bread and toast.
Stack everything together and Viola!
Roasted Eggplant-Pepper-Mushroom-Tomato-Basil-Garlic Sandwich.

Oh my word that looks good! I'm afraid I'm not very creative when it comes to sandwiches,my favorite is a cheeseburger with a big fat slice of vidalia onion with tomatoes and lettuce, I'm getting hungry just thinking about it! LOL!!
