This is one busy week. Tomorrow my husband goes in to have double knee surgery. He is going to be immobile for weeks if not months. This is going to be a test of patience for me, for sure. But I am happy to care for him, because he would do it for me without the reminder to have patience!
Tomorrow is going to be a hectic day. Hubby needs to be at the hospital at sunrise and we wont be home until sunset. That requires some juggling of the Kiddo schedule: school drop off, 2 different pick up times, practice, and dinner.
Thankfully I have a lot of local family to help. I have called on four family members to juggle the "demanding" schedules of my 5 and 7 year old children! (a special thank you to my mother-in-law who also offered, thank you Susie.)
I have been busy preparing and cooking the meals for everyone, including the help, for the next couple of days.
Weekly Dinners
Sunday- Steak Fajitas with a Chimichurri Sauce (I wish I could remember the blog that inspired this recipe, but alas, my brain is a little fried)
Monday- Arugula-fontina-prosciutto pizza
Tuesday (surgery day)- Southwestern Soup (I made this in advance and boy is it good!)
Wednesday- Cheese Tortellini with brown butter, bacon, and butternut squash
Thursday- Wild Caught Halibut (Dad caught it in Alaska), mashed potatoes, and spaghetti squash.
Thai Chicken Pizza with Sweet Chili Sauce
