Weekly Menu

Yes I'm alive! It's been two weeks since my last post but that doesn't mean we haven't been eating....just nothing exciting!

I spent the first week eating our way through the pantry, freezer and refrigerator.

I hate it when things start to pile up. We had weird combinations like pancakes-chicken-salad. I made several soups and salads with all sorts of things...a little steak here, and little chicken there...one sausage, a handful of dried beans...not to worry it got put into something. We ate through it all in one week.

Last week I was just plain lazy. I made two large salads, 1 whole bird, 1 slab of beef, and we ate wraps....all week. The kids mostly had grilled cheese sandwiches.

I lost 4 pounds during the two weeks so maybe it wasn't all bad, just not anything to write about. The wraps were really good though.

Back to usual now.

Weekly Menu

Monday- Chicken Enchiladas
Tuesday- Sweet Potato and Kale Soup (tastes better than it sounds)
Wednesday- Taco Salad
Thursday- Gnocchi with spinach and cream

I think we all have weeks like that! Your photo of that salad looks very yummy though, good to see you post a hello.

This is very interesting information here. I wish I had found this first before I signed up for the other one. This is much better!

Well, I for one have been feeling the withdrawals of your not posting, lol. I see you have enchiladas on your menu and recall that you were looking for a recipe for the sauce awhile ago. I found two and wanted to share them with you. http://spaininiowa.blogspot.com/2010/02/salsa-roja-para-enchiladas-red.html and

I have made the second one from Pinch My Salt, and love it!
I hope all is well Amanda!

Hey! Missed you. But, I totally understand. Those wraps look seriously good!

We're in the process of trying to clean out our fridge/freezer too. Funny how much "stuff" we accumulate when we're not paying attention. I think we tend to "stock up" more than you do -- but, even so, when I've got 6 packages of chicken thighs in the freezer, it's time to start using them up!

One of the difficult things about being a food blogger is that if you aren't thinking up new recipes, you're constantly haunted by your languishing blog!

I'm so disorganized at times. I'm like your polar opposite. I make one meal, eat the leftovers the next night, and then it's back to the store and try to think of what to make again! That's why I admire the foresight of this blog so much!
