Individ...</title><content type='html'>KlKelley, thank you for visiting my blog.  Individual pies are just as easy as one big one.  All you need is small (personal sized) baking dishes.  You can pick those up at Crate and Barrel or any cooking store.  &lt;BR/&gt;&lt;BR/&gt;If you are using commercially prepared pie crust just let it thaw on the counter for a few minutes which will allow it to become workable.  Cut it in the demesions you need.  Remember that the bottom crust is optional. I made this Chicken Pot Pie (first time I made pot pie ever) and it was AWESOME!  I added onions and mushrooms and gave them a quick saute to make them soft before adding them to the peas and carrots veggie mix.  My husband loved it and we will definitely make it again.  It sure beats the frozen pot pies our moms used to serve us.
